Sweet and Spicy Chicken

Fry chicken- 2 chicken thighs

1/2 large Onion
1/2 Carrot
2 cloves garlic
one tbsp ginger
1 cup pinapples
Chili Japones

Sauce:
Ketchup- 2tbsp
Honey Dijon Mustard- 2 tsp
Vinegar-1/4 cup
Brown Sugar- 2 tbsp
Oyster Sauce- 1tbsp
Soy Sauce- 2 tbsp
Cornstarch- 1 tsp
Water- 1 cup
pineapple juice- 1/2 cup
Chili Japones

Fry Chicken. Set aside. Make sauce in the mean time. Combine all, except for cornstarch and water. let simmer, add cornstarch mixture.
Olive Oil, Garlic, ginger, Chili. Add onion, carrots, pineapple. Add half sauce to vegetables. Stir.
Add Chicken. Stir.
Mix well and serve over bed of rice.
